Ingredients (Serves 2-3)
Buckwheat base
1 cup roasted buckwheat groats (170 g / 6 oz)
2 cups water (480 ml)
½ tsp salt
Protein of your Choice
2 chicken breasts (approx. 350 g / 12 oz total)
or
2 salmon fillets (approx. 300 g / 10-11 oz total)
You can also use grilled turkey, prawns, tofu, steak strips, or a soft-boiled egg. Buckwheat pairs beautifully with almost any protein, making this bowl easy to adapt to your preference.
Vegetables
1 red bell pepper, sliced
1 zucchini, sliced
1 cup broccoli florets (150 g / 5 oz)
1 tbsp olive oil
Salt & black pepper
To serve
1 ripe avocado, sliced
Fresh herbs (parsley or dill)
Dressing options
Extra virgin olive oil & lemon
or
A small knob of butter melted into the warm buckwheat
or
Light soy sauce
or
Greek yogurt with garlic & lemon
Method
Cook the buckwheat:
Rinse the groats. Cook in twice the volume of water. Bring to the boil, cover and simmer for 8-10 minutes until water is absorbed. Leave to stand for 2 minutes before serving. Season to taste.
Roast the vegetables:
Toss vegetables with olive oil, salt and pepper.
Roast at 200°C (400°F) for 18-22 minutes until tender and lightly caramelised.
Cook the protein:
Season chicken or salmon with salt and pepper.
Grill or pan-sear until fully cooked:
o Chicken: 5-6 minutes per side
o Salmon: 3-4 minutes per side
Assemble:
Divide buckwheat into bowls.
Top with roasted vegetables, sliced protein and avocado.
Finish with your chosen dressing and fresh herbs.

Serving Tip
For a lighter bowl, use yogurt dressing.
